this is one of those rare weeks where my day off falls on a tuesday. and i had a really great day. the house was still (mostly) clean from the weekend. i didn’t have any homework because my class is done for the semester. i had these beautiful flowers from the saturday farmer’s market that are just looking gorgeous today. the weather was awesome–the first day that i’ve been able to go outside, barefoot, and actually feel warm this year. i started the day off with a little bit of yoga, then went for a 4 mile run (and by the end the only thing that hurt was the second toe on my left foot. i know. weird.). i even had a 98% vegan day! (there was the tiniest bit of yogurt in my dinner)
there are a few booths at the farmer’s market that already have ripe tomatoes, so i thought about having my favorite tomato and cheese sandwich for lunch today–but then realized that i’d been vegan so far, so i decided to try a tomato and avocado sandwich instead. with a little salt and pepper? yum. and a side order of homemade pickled golden beets from late last summer.
i also discovered, while getting my daily blog fix that i had won the glittergoods giveaway! woo hoo!
and i finally had time to try out the homemade pita bread recipe from smitten kitchen. it’s a bit of a time-consuming process (make it 8 hours before, let it sit in the fridge, check it every hour for the first four hours to make sure it hasn’t risen. let it sit for 20 minutes at room temp, then roll it out and let it sit another 10. then cook each piece for three minutes on a pizza stone.) and mine didn’t look anything like hers, so…. i’m not sure what i did wrong. and i’m not sure i care to try again. but we’ll see. but because i was working so hard to make pita, i figured they should probably be eaten for supper. and what goes well with pita? falafel! i found a falafel recipe online and it was very easy to make them from scratch. so this was my supper:
pita on the bottom, slathered with hummus (and a little tahini/yogurt sauce), topped with tomato, cucumber and lettuce. yum-yum. and probably the most filling “vegan” dinner i’ve ever eaten.
all around, just a very, very nice day. ahhhhhh…..
