breakfast: um… watermelon, mango? probably. kale, almond butter
lunch: lettuce, sprouts, quinoa, grilled chicken, almonds, black beans, blueberries, almonds with a lime/cumin/olive oil/salt dressing. yum! watermelon for dessert.
snacks:Â almonds, apple, rice crackers, hummus, homemade “larabar” (coconut creme pie with added no-sugar dried pineapple)
dinner: watermelon, coconut water, kale, mango, almond butter. yes, i’m getting repetitive.
whoa. are we done with a whole week? that went by pretty quickly. we had some good salads, and i actually really enjoyed eating pretty much everything. i’ll probably continue trying to eat mostly clean for at least the next few days because it feels great! but i may sneak a few more wheat things and dairy things.
did i accomplish my goals?
1. eat more salads. yes! and i think we’ll probably continue to have more salad-y lunches.
2. lose a little more weight. ummm… maybe? my scale this morning reported a 3 pound loss from my first day, but sometimes I can fluctuate as much as 10 pounds over the course of a month, so the jury’s out on that one.
3. remind myself how much i enjoy eating fresh fruits, veggies, and other healthy things. yes! that quinoa salad will definitely become a standard summer dinner rotation and i am loving, loving, loving summer fruits right now!
4. see if i like summer cleanses better than winter. oh yes. so many more foods to choose from and smoothies for supper seem way more appetizing this time of year.
i’m actually writing this on “day 8” and i enjoyed a lunch of stir-fried zucchini (zucchini, onion and cashews with a little soy sauce) and some “pink rice” (a brown rice alternative i found at the co-op. super yummy!), so the cleanse continues so far. although i think i’ll probably eat a solid supper with my family.
